Making IC-Friendly meals that also taste good can be challenging. Here is a super easy recipe perfect for dinner or for a bladder friendly meal prep!

I, previously, was meal prepping chicken breast for my bladder friendly work lunches but I soon became bored of them. Thankfully, the next time I went to Kroger, they were sold out of breasts (thanks to COVID-19). All they had in stock were bone-in chicken thighs with skin.
I had never cooked chicken thighs before so I was a little hesitant, but I purchased a pack. I was shocked at how great these were! Never again will I buy bland chicken breasts if thighs are available. Thighs are dark meat and have more fat on them than breasts and this helps prevent overcooking. We all know the taste of overcooked, rubbery chicken breasts and as I new cook, I've made my fair share of chewy chicken. But, have no fear, thighs are very hard to over cook!
Garlic and many herbs including basil, oregano, and rosemary are supposed to be extra soothing during an Interstitial Cystitis flare.
Ingredients:
chicken thighs with skin (I used a pack of 4, 2.3 lbs)
salt
pepper
garlic powder
parsley (could be replaced with basil, oregano, or rosemary for soothing herb)
cooking spray (can be left out)
Directions
Preheat the oven to 350 degrees F.
Cut off excess skin or fat from thighs. I like to keep just enough skin to cover the top of the thighs.
Sprinkle salt, pepper, garlic powder, and parsley to taste on both sides of thighs.
Place thighs on a cookie sheet skin side up.
Spray just a bit of cooking spray (if you choose to) on the skin side of thigh. I used Kroger's coconut oil spray and it helped crisp up the skin just a bit more than normal.
Cook in oven for 45 minutes.
Turn the broiler on and move thighs to the top rack of the oven.
Stand there and watch them brown. I do not walk away when I do this because of how fast they can burn if you're not watching. Take them out when they've browned/crisped to your liking.
Serve immediately or store for meal prep.
And there you have it. A quick, easy, and delicious chicken thigh recipe for sensitive bladders. I sautéed some fresh green beans to go with it and rotated carbs one with one with white rice and one with a chopped sweet potato.
